La Tradizione
The name “Illegale” made with 100% Nebbiolo refers to the illegality of using the name "Nebbiolo" which was forbidden in our territory until the 2019 vintage, this is despite the fact that this grape has always been grown in Monferrato. The grapes come from the Nebbiolo growing in the vineyard called the "Rombi" vineyard, exposed to South / South-West, on lands rich in limestone, capable of giving elegance and finesse to the wine, fragrant aromas and longevity. Nebbiolo is the grape variety that Tenuta Santa Caterina has always believed in.

Density per hectare: 5,000 vines/hectare
Training system: Guyot
Harvesting by hand, from October
Grape production per hectare: 65 quintals/hectare
Fermentation temperature about 26-28°C with thermal control
Alcohol content 14% vol
Contains sulfites
Ageing in 30 hl large oak barrels for 12 months and bottled for a further 6 months
Service temperature 18-20° C
Available sizes 0.75 litres and 1.5 litres
